I am not sure what to call this, but I just threw some things together that I had in my fridge and pantry. I didn't do an exact measurement, so please adjust to your tastes and likes. It may not sound great when reading this recipe, BUT it was so yummy.
Ancient Harvest Quinoa- follow directions on package and make enough for you family. I used 2 to 1 ratio like rice. We are a family of 4.
Prepare quinoa and let cook while preparing the rest of ingredients.
1 T grapeseed oil
1 large red pepper-diced
1 large green pepper-diced
2 carrots-diced
1 small onion -diced
2 cloves garlic
1/2 c (approx) Tofuti sour cream
1/4 c Lite House Vidallia onion dressing- (approx)
lettuce leaves whole (use for a bowl)
salt and pepper to taste
Nuts-for on top ( we use mixed nuts) any nut that you like will work I think.
Saute onion and carrots in oil until tender, add garlic and peppers, continue to cook until peppers are soft or until your liking. Add in quinoa to vegetable saute and mix well. Add vidallia dressing and tofuti sour cream and salt and pepper, mix really well. Let mixture warm through. Add mixture to lettuce bowl and top with nuts. YUMMY!
