Curry Quinoa over Roasted Veggies

I needed another quick dinner that was pulled out of whatever is left in my kitchen. I always have ancient grains quinoa on hand so I thought and thought and didn't come up with anything. So I just decided to start boiling some (according to package directions) and then I thought "ah I will roast some veggies in the oven" After getting all the veggies on the pan and coated with oil and in the oven (500 until almost done; about 15 min, very last 2-3 minutes put to broil. watch carefully) then I was stumped. No sauces, no meats (husband is on a vegetarian diet right now) what am I supposed to do with quinoa and veggies? well here is what I did....

While the water and quinoa were boiling I added juice from one whole lemon, salt, garlic pepper, and curry seasoning. I eyeballed all of it to what I know my family likes. All the seasonings were added while there was  liquid in the quinoa, I let it set up as package requests. It came out more moist and flavorful than plain old quinoa.
About the same time the quinoa was done,  the veggies were done.
I salted the veggies as soon as the came out of the oven. I then put veggies down on plate first and covered with lemon curry quinoa. At very last I chopped up some roasted pistachios and sprinkled over the top. This was such a hit! IT IS SO GOOD.


Hint, remember even spices can contain wheat. I always use McCormick spice unless the spice says gluten free on it, or it's a pure herb or spice.
