Gluten Free!

Do you need help starting out with your gluten free diet/lifestyle? I am here to help you. Being diagnosed with Celiac disease is overwhelming and can be very confusing. As my mom would say, "people don't like change." SO, what you have known all your life and the ease of just buying whatever and eating whatever is GONE! Welcome to gluten free living!

Lots of Opinions

There are so many opinions about eating gluten free and what you can and cannot do and lots of people give their advice (including me) So I just want to say a few things....Please remember that these are all MY opinions.

First, I would like to comment on my other post about WinCo and bulk food items. I think that ANY time you use bulk food items, whether gluten free or not, you take a risk of contamination. I have used these bulk items (I only use the kind that have the lever that you pull down, I DO NOT use the scoop bins) and I haven't had an issue, so far.

Second, I have heard many people using products that I personally wouldn't and then they add their opinion, spreading the word to everyone that these things and place are all OK for you to eat at. I have an issue with this just because with my own personal experience this is not so true. I am talking about eating out at certain places or using foods that are not gluten free but have no gluten ingredients listed. I want to caution everyone with what they purchase and where they eat. Please, as much as it seems that you are irritating stores or restaurants, always always ask a lot of questions. Make sure that restaurants know what gluten free is and that they take every precaution possible. Most place are not safe for true Celiac's to eat at. This is a documented fact by local doctors and celiac.org. There are only 2 restaurant I know of locally that are completely gluten free  food  ZEST restaurant and bar and Eleanor's bake shop. Neil's Fish house does however have a small dedicated fryer for gluten free items. YAY!  Other restaurants can accommodate and do their best. As for grocery products again, always always ask or contact the manufacturer. Here in Utah if you are still unsure please go to "against the grain" grocery store. Everything there is gluten free and they will be happy to answer questions for you.
Please ask and speak with your gastroenterologist as well, and of course a lot of trial and error.

Manufacturers are famous for changing ingredients so please get in the habit of label reading and contacting them.
