After you are diagnosed with Celiac it can be very overwhelming. The GI doctor says don't eat wheat and they recommend to see a dietitian. Well I did all that and I was still overwhelmed and being contaminated. There is so much information that you have to learn and so much you have to change. It sounds easy but it isn't, until you get the hang of it. My biggest advice for anyone who needs or wants to go gluten free is to READ labels. This is huge. The second biggest thing is to know that wheat is "hidden" in things that don't mention it, like, natural and artificial ingredient, fragrances, and starches. This is where you have to contact the manufacturers directly. I have done this a lot and will have lists available when completed.
Keep breathing and always know that fresh fruits, vegetables, fresh meats and things that already say gluten free are safe to eat.
