2 1/4 tsp. yeast
2 tsp. xanthan gum
21/2 tbsp sugar
3 1/2 c GF AP flour ( I used Bob's Red Mill)
1 tsp salt
1/4 c oil (I used it from sun-dried tomato jar)
1/2 c sun-dried tomatoes (or more depending on taste) also depends on liquids equaling to 2 cups total)
2 eggs (beaten)
warm water - to fill to 2 full cups liquid
Make sure all ingredients are room temperature.
Add oil, then add tomatoes, and eggs in a 2 cup measuring cup, fill the rest of the way to 2 cups with warm water. In a separate bowl add all dry ingredients (EXCEPT YEAST) and mix and/or sift together. Add liquids with tomatoes to bread machine, (or however your bread machines asks you to add ingredients) add flour mixture on top. Make a well in the middle and add yeast.
I used basic setting and medium crust for this bread on my bread machine. A few minutes after mixing I scrape down the sides. I found this recipe to be a little dry so I also add (at this point) a few splashes of warm water then scrape down the sides again. Leave alone and let the machine do the rest!
