I made a real yummy soup I thought I would share, Most of my ingredients are from Costco, but you can find many of the ingredients in the regular grocery stores. Remember to check labels.
Please feel free to use any veggies and flavorings you wish!
1 Rotisserie chicken (Costco's say GF right on the label)
2 Quarts chicken stock (Kirkland brand is gluten free)
1 Quart water (if needed, depends on amount of volume needed and taste)
2 cans mushrooms (or bundle of fresh)
3 Carrots (diced) I had individual baby carrots and I added 3 bags
1/2 bag Peas (frozen)
2 cups brown rice (I use western family)
1 Tbsp. McCormick s garlic and herb salt free seasoning
Lawrey's Seasoning Salt (matter of tasting) I used about 1 Tbsp for this huge pot)
2 cloves garlic
1 yellow onion (or McCormick's dried onion)
Shred all meat and skin off of bones, then replace bones and skin into a large pot. Put meat aside. Add garlic, onion, salt free seasonings, season salt, and chicken stock to pot with bones and skin. Bring to a boil and boil for 45-60 minutes. Strain through strainer and replace stock into pot and throw out remaining bones and skins. Taste stock and add more seasoning if needed and add the water (if needed). Bring back to boil and add all remaining ingredients, including shredded meat :) bring to a boil again, turn down let it simmer for another 30-45 minutes, stirring occasionally. Yummy.
