OK, so I am still trying out the bread machine. I haven't gotten to try a lot of different recipes yet but here is one that is my favorite so far. For this I am using "Pamela's GF Bread mix" there are a lot of recipes on the back and used some of them and then added to it for my own. IF you are using your own GF flours make sure you use a blend of different types of flours, for example: sweet rice, brown rice and then a potato flour, or whatever you like, and don't forget your xanthan gum too. I am planning on experimenting with flour mixtures soon so I will update on this later..
Gluten Free Sweet Bread (bread machine)
2 1/2 cups Pamela's GF bread flour
1 cup oat flour (I used bobs red mill GF oats and blended it to a flour)
1/4 cup butter, melted
2 1/4 tsp dry active yeast (or 1 yeast packet)
3 large eggs
1/2 cup milk
3/4 cup warm water
maple syrup
please make sure all your ingredients are warm, this makes a huge difference in your bread.
In a 2 cup liquid measuring cup, put all your liquid ingredients, I start with the butter, then water, eggs, milk.With these it should almost be at the full 2 cups mark. So then I add the maple syrup to fill it to the 2 cups. Add liquid ingredients to bread machine first, then add your dry mix on top of liquids. Make a small well in the flour and add your yeast. It cannot touch the liquid yet. Close the machine and use the "basic" setting on your bread machine. Press start. After a minute or so I check it and scrape down the sides, then I leave it. At the end of my bread machine cycle, I end up putting my bread in the oven for about 8 minutes to brown the top (350 degrees) This will just depend on your bread machine.
